Easy Hawaiian Teriyaki Bake

I have great belief that this new recipe will be a fan favorite! This meal is #vegan, #GF, #DF, and refined sugar free. One of the best parts about this recipe is that it is a one pan meal!! (The fewer the dishes the better!).


This recipe takes a twist on the classic Hawaiian teriyaki skewers, and makes them a little less messy and a lot easier to eat. Please enjoy.

Hawaiian Teriyaki Bake

Prep Time: 15 mins Cook Time: 20-25 mins Total Time: 35 mins

Serves: 2-3

Ingredients:

For Teriyaki Sauce:

  • 1 tsp fresh ginger, grated or minced

  • 1/4 cup 100% pineapple juice

  • 1/4 cup tamari (or sub coconut aminos/soy sauce)

  • 2.5 Tbsp maple syrup

  • 1 large clove garlic, minced

  • 1/2 Tbsp cornstarch (more if needed)

Remaining Ingredients:

  • 1/2 large yellow bell pepper (in large bite size pieces)

  • 1/2 large green bell pepper (in large bite size pieces)

  • 1/2 cup pineapple (in small bite sized pieces)

  • 1/2 small red onion (in large bite sized pieces)

  • 1/2 a 500g block of extra firm tofu (water drained, cubed)

Directions:

  1. Begin by preheating the oven to 450. Chop veggies, pineapple, and tofu while oven is preheating.

  2. In a small pot, mix together all ingredients for teriyaki sauce. Mix well and place on stove top over low-medium heat. Cook just until you notice the sauce begin to thicken, stirring constantly. (About 2-4 mins.)

  3. Add vegetables, pineapple chunks and tofu into a large bowl, mix well then pour over the teriyaki sauce. Mix again till all ingredients are well coated.

  4. Line a baking tray with parchment paper. With a spoon, carefully scoop out vegetable mix onto baking tray, allowing any remaining sauce to settle at the bottom on the bowl. The remaining sauce will be saved for later (do not throw it away or pour over top of veggie mix).

  5. Place tray in the oven and cook for about 20-25 mins or until veggies become soft, gently flipping half way through cooking.

  6. Once veggies are done, enjoy over rice or quinoa, and pour remaining teriyaki sauce on plated food! Bon Appetit!!

ADDITIONAL NOTES:

- Friendly reminder once again to not dump all sauce onto the tray!! (I did this in the past and it created far too much liquid on the tray while cooking!)

- While this recipe is vegan, I am sure it would taste just as good if you replaced the tofu with some cubed chicken breast.

- Lastly if you do not want to use cornstarch, arrow root powder may be subbed instead.
