Peppermint Hot Cocoa Baked Oats Recipe

Here's a warming breakfast to get you through the chilly mornings that are to come! This recipe is #vegan #glutenfree and #refinedsugarfree ! It is also simple and takes roughly 15 minutes to make. Please enjoy this satisfying winter breakfast that tastes like dessert!

Serves: 1 (makes 1 small ramekin) Total Time: 15 minutes


Ingredients:

  • Heaping 1/3 cup of rolled oats

  • 1/2 a medium to large banana

  • 1/3 cup of unsweetened plant based milk of choice

  • Pinch of salt

  • 1 tbsp of unsweetened cocoa powder

  • 1`/2 tsp peppermint oil or extract

  • 1/2 tsp baking powder

  • 1/2 tbsp chia seeds

  • Optional: 1 tbsp roughly chopped peppermints or candy cane for topping

  • Optional: 1 tbsp roughly chopped dark chocolate or chocolate chips

Directions:

  • Preheat the oven to 400 degrees.

  • Begin by adding oats, banana, plant milk, salt, peppermint extract, cocoa powder, baking powder and chia seeds into a Nutribullet or other small blender. Briefly pulse or blend till ingredients make a texture a little thicker than cake batter. Do not over blend.

  • Pour mixture into small oven safe bowl or ramekin. Add additional toppings of peppermint and dark chocolate.

  • Place in oven for 8-11 minutes or till oats have risen and the outside layer has become firm. (For a softer center cook closer to 8 minutes, for a muffin like texture throughout cook closer to 11 minutes).

  • Allow to cool for 3-5 minutes and enjoy!
